Chinese Cassia Cutting Practices

Chinese cassia, often confused with true cinnamon, has been a staple in traditional Chinese cuisine and medicine for centuries. The process begins with selecting appropriate trees, primarily Cinnamomum cassia, which thrive in specific climatic conditions. Farmers hand-pick trees with healthy bark and robust growth. Harvesting involves cutting the inner bark during peak sap flow in spring, using traditional knives to avoid damaging the tree. Sustainable practices ensure only the innermost bark is harvested, allowing the tree to regenerate. The bark is then dried, either in the sun or under controlled conditions, to retain its flavor and quality. These practices reflect a commitment to sustainability and the preservation of agricultural heritage in China.

Once at our facility, Cassia barks will undergo multiple rounds of cleaning - washing - drying - re-cutting - selection - re-cleaning - metal detection - lab tests (micros, pesticides, lead, ETO etc.) under strict quality control and food safety procedures as per our Integrated Quality Management Systems so as to ensure high quality and safe produce reaching our customers and consumers before being packed into customized retail/catering packs as per White Label / Private Label arrangements with each customer.
